Banana-Sweetened Bran Muffins


  • 1 2/3 Cups Bran
  • 2 Tsp Baking Powder
  • 1 1/2 Tsp Cinnamon
  • 3 Medium, Ripe Bananas
  • 1/2 Cup Unsweetened Applesauce
  • 1/2 Cup Plain Greek Yogurt
  • 2 Large Eggs
  • 1 Tsp Vanilla Extract



  1. Preheat Oven to 375°F. Place DuraChef® Non-Stick Baking Sheet circles into bottom of muffin tin cups.
  2. In medium bowl, whisk together bran, baking powder, and bran.
  3. In large bowl, mix together mashed bananas, applesauce, Greek yogurt, eggs, and vanilla extract until well combined.
  4. Add dry ingredients to wet ingredients and mix until combined.
  5. Divide batter evenly into muffin tin cups.  Bake for 20 minutes. Remove from oven and transfer muffins from muffin tin to wire rack to cool.
