Mix together all of the fajita seasoning ingredients in a small bowl and set aside.
Place the corn in the medium pot and add water. The water should cover the corn. Add in a pinch of salt and bring the pot to a boil. Cook for 2-3 minutes and drain.
Place the DuraChef® Non-Stick Cooking Sheet in the skillet. Heat skillet over medium heat. When the skillet is heated, add in the beef. Season the beef with salt and pepper. Add the garlic and oregano. Let cook for 10 minutes, until the meat is browned. Break up the beef with a spoon as it cooks. Remove from skillet and set aside.
Increase the heat to medium-high and add onion and bell peppers to skillet. Cook for about 5 minutes, until the vegetables begin to soften.
Return the beef to the pan. Add in the tomatoes and about 1 Tbsp of the fajita seasoning. Toss together and cook for about 3 minutes. Slice the corn kernels off the cob and add to skillet. Sprinkle the cheese on top. Cover and cook for about 6 minutes, until the cheese melts.
Uncover the skillet and garnish with avocado and cilantro. Serve immediately from the skillet.
