Carrot Cake

Ingredients

  • 3 Eggs
  • 1-2 Bananas
  • 10-15 Fresh Dates, seeds removed
  • 6 Tbsp. Sunflower Oil
  • 1 Cup Whole Wheat Flour
  • 1 1/2 Tsp Baking Powder
  • 3 Tsp. Cinnamon
  • 1/2 Tsp. Nutmeg
  • 1/2 Tsp. Cardamon
  • 3-4  Carrots, grated
  • 1/2 Cup Coconut Flakes
  • 1/2 Cup Walnuts, chopped
  • 1/2 Cup Raisins
  • 7 Oz Cream Cheese
  • 3 Tbsp. Honey
  • 1/2 Lime
  • 1/2 Cup Hazelnuts

Utensils

  • 2 Mixing Bowls
  • Cake Pan
  • DuraChef® Non-Stick Baking Sheet

Directions

  1. Preheat the oven to 350°F. Place the DuraChef® Non-Stick Baking Sheet inside the Cake Pan.
  2. In one mixing bowl, whisk together the eggs. Mix in the flour, baking powder, cinnamon, nutmeg, and cardamon.
  3. In a separate mixing bowl, mix together bananas, dates and oil. Mix in the cream into the the other mixing bowl.
  4. Add in the grated carrots, coconut flakes, walnuts, and raisins. Mix well and pour the mixture into the cake pan.
  5. Place cake into the oven and bake for 40 minutes. Serve and enjoy.
