Chicken Stir-Fry with Peanut Sauce


  • 2 Tsp Dark Sesame Oil
  • 1 Lb Chicken
  • 2 Cups Broccoli
  • 1 Red Bell Pepper, Sliced
  • 1/4 Cup Coconut Milk
  • 2 Tbsp. Peanut Butter
  • 1 Tbsp Sriracha
  • 2 Tsp Lime Rind
  • 1 Tbsp Lime Juice
  • 1/4 Tsp Ground Ginger
  • 1/4 Tsp Ground Cumin
  • 1/4 Cup Cashews



  1. Place the DuraChef® Non-Stick Cooking Sheet in the wok. Place the wok over high heat. Add 1 Tsp of oil. Add chicken and cook for about 1 minute on each side. Remove chicken from pan and cut into thin slices.
  2. Add broccoli and bell pepper to pan. Stir-fry for about 4 minutes, when vegetables get lightly browned.
  3. Reduce heat to medium-high. Combine remaining oil, coconut milk, peanut butter, sriracha, lime rind, lime juice, ground ginger, and ground cumin in a small bowl.
  4. Add chicken and coconut mixture into the pan. Cook for about 30 seconds. Remove from heat and sprinkle with cashews.
