Place the DuraChef® Non-Stick Cooking Sheet in the wok. Place the wok over high heat. Add 1 Tsp of oil. Add chicken and cook for about 1 minute on each side. Remove chicken from pan and cut into thin slices.
Add broccoli and bell pepper to pan. Stir-fry for about 4 minutes, when vegetables get lightly browned.
Reduce heat to medium-high. Combine remaining oil, coconut milk, peanut butter, sriracha, lime rind, lime juice, ground ginger, and ground cumin in a small bowl.
Add chicken and coconut mixture into the pan. Cook for about 30 seconds. Remove from heat and sprinkle with cashews.
