Coconut Granola Cookies

Ingredients

  • 2 Cups Sugar
  • 1/2 Cup Coconut Milk
  • 1/2 Cup Coconut Oil
  • 1 Tsp. Vanilla
  • 1/2 Cup Peanut Butter
  • 4 Cups Granola
  • 2 Cups Unsweetened Coconut
  • Pinch of Salt

Directions

  1. Place the saucepan over high heat. Mix together sugar, coconut milk, and coconut oil. Bring to a rolling boil and let boil for 90 seconds. Add in vanilla, salt, and peanut butter. Stir until well mixed and remove from heat.
  2. Fold in the granola and coconut. Stir until well incorporated
  3. Place DuraChef® Non-Stick Baking Sheet onto baking sheet. Drop spoonfuls of the coconut granola mixture onto the baking sheet and let cool and solidify. Store in a cool place.
