Honey Lime Chicken with Cowboy Caviar


  • 3 1/2 Tbsp Lime Juice
  • 2 Tbsp Honey
  • 2 Tsp Olive Oil
  • 1/4 Tsp Black Pepper
  • 1/4 Tsp Salt
  • 4 Chicken Breasts
  • 1 Can Black-Eyed Peas
  • 1/2 Cup Yellow Corn
  • 1 Tomato, Chopped
  • 1 Avocado, Chopped
  • 1/4 Red Onion, Chopped
  • 2 Tbsp Cilantro, Chopped
  • 1/2 Tsp Ground Cumin



  1. Combine 2 Tbsp lime juice, oil, honey, pepper, and 1/8 Tsp salt in the marinade bag. Add chicken to bag and toss to coat. Let chicken marinate in bag for up to two hours.
  2. Make the Cowboy Caviar by mixing the beans, corn, tomato, avocado, onion, cilantro and cumin in the medium bowl. Stir in the remaining lime juice and salt.
  3. Place the DuraChef® Non-Stick Cooking Sheet in the skillet and place on the stove over medium-high heat. Place the chicken on the skillet and cook for about 5 minutes on both sides, until the chicken is thoroughly cooked.
