Jalapeño Sweet Potato Puffs


  • 1 1/2 Cups Cooked, Mashed Sweet Potatoes
  • 2 Large Eggs
  • 3/4 Cups Cheddar Cheese
  • 3 Tbsp Greek Yogurt
  • 3 Strips Cooked Bacon, Chopped
  • 1 or 2 Jalapeño Peppers



  1. Preheat oven to 400°F.
  2. While the oven is preheating, peel the sweet potatoes. Add the potatoes to a pot of boiling water and cook for 15-20 minutes, until tender. Mash the potatoes using a fork or spatula.
  3. Combine the mashed potatoes with all remaining ingredients in a bowl, and mix well.
  4. Place the DuraChef® Non-Stick Baking sheet in the wells in the mini muffin tin. Scoop mixture into the mini muffin tin wells. Bake at 400°F and remove from oven. Allow puffs to cool before serving.
