Summer Zucchini Bread

Ingredients

  • 3 Eggs
  • 1 Tbsp. Lemon Zest
  • 1 Cup Oil
  • 2 Cups Flour
  • 1 Cup Sugar
  • 2 Tsp. Baking Soda
  • 1 Tsp. Vanilla
  • 1 Tsp. Baking Powder
  • 2 Cups Zucchini, shredded
  • 1 Tsp. Salt
  • 1 Tsp. Cinnamon

Directions

  1. Preheat oven to 350°F.
  2. In one large bowl, beat together eggs, oil, sugar, and vanilla. Slowly add in zucchini and lemon zest.
  3. In the other large bowl, combine the flour, baking soda, baking powder, salt, and cinnamon. Slowly add the zucchini mixture until completely mixed together.
  4. Place DuraChef® Non-Stick Baking Sheets in the Bread Loaf pans. Divide batter evenly into the two loaf pans and bake for 1 hour and 15 minutes.
